Easy Veggie Lunch Wrap with Carrot Avocado Pate
I just discovered the yummy flavor combo of the carrot pate the other day and I am already hooked. Also yummy on toast or with veggie sticks, so don't be afraid to make some more for later.

Ingredients
For the pate
- 1/2 avocado
- 1 cup carrot roughly chopped
- 1/2 orange juice only
- 2 tbsp extra-virgin olive oil
- sea salt to taste
- black pepper to taste
For the wrap
- 1.5 cup red cabbage shredded
- 2 cups salad greens of your choice shredded
- 1.5 cup tomato sliced
- 4 small wrap/tortilla (GF If needed)
Instructions
- In a small food processor or blender, combine all pate ingredients. Process until smooth.
- Top warps with carrot pate and veggies. Fold and serve!
Notes
- Take-along tip: wrap in aluminum or plastic foil.
- Feel free to double the recipe and have some more for tomorrow's lunch too. Also, delicious with veggie sticks as a healthy snack. Or try Carrot Avocado Spread on Toast, it's made with the same avocado-carrot pate!
