A yummy and colorful way to start your day. Though I used tropical fruits for this one, you can add any fruit, nut or other topping you like. Be creative and enjoy the goodness of this plant-powered meal.

Ingredients

  • 1 dragon fruit (pitaya) chunked
  • 1 cup pineapple chunked
  • 1 banana chunked
  • 1/2 cup granola (certified GF if needed) homemade or store-bought
  • 1 cup plain unsweetened (coconut) yogurt homemade or store-bought

Instructions

  • Combine chunked fruits with yogurt and top with (homemade) granola and/or other superfoods/toppings of your choice.

  • Homemade cultured coconut yogurt recipe: super easy, dairy-free, and packed with health-promoting friendly gut bacteria or probiotics.
  • Homemade granola: I love making my own granola. It’s so easy and you can add all the grains, seeds, nuts, and/or dried fruits you like most.
