Tomato Spinach Salad with Curried Avocado Cream
A refreshing summer salad with curried avocado cream to die for. So easy and so yum!

Ingredients
For the curried avocado
- 1/2 avocado peeled, pitted and mashed
- 1/2 Thai chili pepper finely chopped (or to taste if you like it more or less hot)
- 1/4 lime/lemon juice only, or to taste (use less if using lemon)
- 1/2 tsp curry powder
- 1 tsp fresh grated ginger
- 1 tsp maple syrup/honey
- sea salt to taste
- black pepper to taste
For the salad
- 3 cup spinach
- 1 cup tomato chopped
- 1/2 cup (Daikon) radish julienned or sliced
- 1/2 cup carrot julienned
- 2 oz feta or mozzarella cheese cubed or crumbled
Instructions
- To make the curried avocado, mash the avocado and stir in the chili pepper, lime juice, curry powder, ginger, honey, salt, and pepper. If you don’t like it too chunky, use your food processor to create a cream-like consistency.
- Add spinach to a plate and top with other veggies, cheese, and avocado sauce.
Notes
Optional: add chopped almonds or other nuts if you like!
