Apple Celery and Red Cabbage Salad

Ingredients
For dressing
- 2 tablespoons apple cider vinegar
- 2 teaspoons maple syrup/honey
- 1 teaspoon Dijon mustard
- 1/2 lime juice only
- 1 tablespoon extra-virgin olive oil
- sea salt to taste
- black pepper to taste
For salad
- 1 cup celery finely chopped
- 2 cups red cabbage chopped
- 1 apple chopped
- 1/3 cup spring onion chopped
- 1/4 cup fresh chives chopped
- 2 cups salad greens of your choice (spinach, kale, arugula, lettuce, etc. or a mix)
Instructions
For the dressing
- Add all dressing ingredients to a small bowl and whisk until combined. Set aside
For the salad
- Combine all salad ingredients in a large bowl. Add dressing and toss to combine.
- Top with superfoods like almonds, pumpkin seeds, cashew or goji berries if you like.
Notes
- Take the heart of the celery, this part of the celery is much tastier to eat uncooked.
- If taking lunch along to work, keep dressing in a separate container to avoid a soggy mess at lunch.
