Apple Celery and Red Cabbage Salad

A refreshing, colorful detox salad packed with cleansing and liver- and kidney-supporting ingredients. Delicious and good for you. Win-win ;)

Ingredients

For dressing

  • 2 tablespoons apple cider vinegar
  • 2 teaspoons maple syrup/honey
  • 1 teaspoon Dijon mustard
  • 1/2 lime juice only
  • 1 tablespoon extra-virgin olive oil
  • sea salt to taste
  • black pepper to taste

For salad

  • 1 cup celery finely chopped
  • 2 cups red cabbage chopped
  • 1 apple chopped
  • 1/3 cup spring onion chopped
  • 1/4 cup fresh chives chopped
  • 2 cups salad greens of your choice (spinach, kale, arugula, lettuce, etc. or a mix)

Instructions

For the dressing

  • Add all dressing ingredients to a small bowl and whisk until combined. Set aside

For the salad

  • Combine all salad ingredients in a large bowl. Add dressing and toss to combine.
  • Top with superfoods like almonds, pumpkin seeds, cashew or goji berries if you like.

Notes

  • Take the heart of the celery, this part of the celery is much tastier to eat uncooked.
  • If taking lunch along to work, keep dressing in a separate container to avoid a soggy mess at lunch.
