Spiralized Veggies with Tuna and Yogurt Dressing

Ingredients
For the salad
- 1 large zucchini spiralized
- 1/2 cup onion chopped
- 1 cup red cabbage finely chopped
- 1 cup tomato chopped
- 1 can solid white tuna packed in water drained and crumbled
For the dressing
- 1/4 cup fresh parsley chopped
- 1/4 cup fresh chives chopped
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1/4 cup plain unsweetened yogurt
- 1 tbsp honey or maple syrup
- black pepper to taste
- sea salt to taste
Instructions
- Combine all veggies in a large salad bowl. Toss to combine.
- Combine all dressing ingredients and whisk well. Stir in tuna.
- Add dressing to the veggies and stir well to coat.
Notes
- Take along tip: you can make this the day before. Store in an airtight container or Mason jar in the fridge.
- If you don't have a spiralizer, the easiest way to use a vegetable peeler or julienne peeler is to hold the zucchini down on a flat surface and slide from top to bottom to make ribbons or spaghetti-like strands. A vegetable peeler will make flat fettuccini-like strands/ribbons while a julienne peeler will make spaghetti-like strands. We used a spiralizer for this recipe.
