Ingredients

For the salad

  • 1 large zucchini spiralized
  • 1/2 cup onion chopped
  • 1 cup red cabbage finely chopped
  • 1 cup tomato chopped
  • 1 can solid white tuna packed in water drained and crumbled

For the dressing

  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh chives chopped
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1/4 cup plain unsweetened yogurt
  • 1 tbsp honey or maple syrup
  • black pepper to taste
  • sea salt to taste

Instructions

  • Combine all veggies in a large salad bowl. Toss to combine.
  • Combine all dressing ingredients and whisk well. Stir in tuna.
  • Add dressing to the veggies and stir well to coat.

Notes

  • Take along tip: you can make this the day before. Store in an airtight container or Mason jar in the fridge.
  • If you don't have a spiralizer, the easiest way to use a vegetable peeler or julienne peeler is to hold the zucchini down on a flat surface and slide from top to bottom to make ribbons or spaghetti-like strands. A vegetable peeler will make flat fettuccini-like strands/ribbons while a julienne peeler will make spaghetti-like strands.
