Pasta Pesto With Broccoli

Ingredients

For the pesto

  • 1 cup fresh basil leaves packed
  • 1-2 clove garlic
  • 1/4 cup pine nuts roasted
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • sea salt to taste
  • black pepper to taste

For the pasta

  • 2 cups uncooked pasta of your choice (GF if needed)
  • 2 cups broccoli florets
  • 1/8 cup pine nuts roasted (optional)
  • 1/4 cup fresh chives chopped, optional
  • 1/2 lime/lemon juice only, or to taste (use less if using lemon)

Instructions

To make the pesto

  • Combine all pesto ingredients in a blender or food processor and process until smooth.
  • Season with salt and pepper to taste.

To make the pasta

  • Cook the pasta in lightly salt water according to the instructions on the package.
  • Cook or steam the broccoli florets until tender.
  • Drain pasta and broccoli florets and return to one pan.
  • Stir pesto into the pasta. Season with salt, pepper, and lemon juice to taste. Stir again.
  • Divide among the plates and top with roasted pine nuts and chives. You could also sprinkle some extra grated cheese on it.
