Pasta Pesto With Broccoli

Ingredients
For the pesto
- 1 cup fresh basil leaves packed
- 1-2 clove garlic
- 1/4 cup pine nuts roasted
- 1/4 cup extra-virgin olive oil
- 1/4 cup grated Parmesan cheese
- sea salt to taste
- black pepper to taste
For the pasta
- 2 cups uncooked pasta of your choice (GF if needed)
- 2 cups broccoli florets
- 1/8 cup pine nuts roasted (optional)
- 1/4 cup fresh chives chopped, optional
- 1/2 lime/lemon juice only, or to taste (use less if using lemon)
Instructions
To make the pesto
- Combine all pesto ingredients in a blender or food processor and process until smooth.
- Season with salt and pepper to taste.
To make the pasta
- Cook the pasta in lightly salt water according to the instructions on the package.
- Cook or steam the broccoli florets until tender.
- Drain pasta and broccoli florets and return to one pan.
- Stir pesto into the pasta. Season with salt, pepper, and lemon juice to taste. Stir again.
- Divide among the plates and top with roasted pine nuts and chives. You could also sprinkle some extra grated cheese on it.
