For the pesto
- 1 cup fresh basil leaves packed
- 1-2 clove garlic
- 1/4 cup pine nuts roasted
- 1/4 cup extra-virgin olive oil
- 1/4 cup grated Parmesan cheese
- sea salt to taste
- black pepper to taste
For the pasta
- 2 cups uncooked pasta of your choice (GF if needed)
- 2 cups broccoli florets
- 1/8 cup pine nuts roasted (optional)
- 1/4 cup fresh chives chopped, optional
- 1/2 lime/lemon juice only, or to taste (use less if using lemon)
To make the pasta
Cook the pasta in lightly salt water according to the instructions on the package.
Cook or steam the broccoli florets until tender.
Drain pasta and broccoli florets and return to one pan.
Stir pesto into the pasta. Season with salt, pepper, and lemon juice to taste. Stir again.
Divide among the plates and top with roasted pine nuts and chives. You could also sprinkle some extra grated cheese on it.
