Mint Mango Zoodles aka Zucchini Noodles

Ingredients
For the raw noodles
- 1 zucchini spiralized
- 1 carrot spiralized
- 1 cup red cabbage shredded (or spiralized)
For the mint & mango sauce
- 1 cup mango
- 2 tbsp extra-virgin olive oil
- 1 tbsp plain unsweetened yogurt (optional)
- 1 tbsp apple cider vinegar
- 1/4 cup fresh mint leaves
- 1 Thai chili pepper seeds removed
- 1 tbsp fresh grated ginger
- 1 clove garlic
- sea salt to taste
- black pepper to taste
Instructions
- Add all mango sauce ingredients in a mixer or blender and mix until smooth.
- Combine zucchini spaghetti, carrots, and red cabbage in a bowl. Top with mango mint sauce.
