Make Ahead Mango Banana Parfait
I love make-ahead breakfast parfaits. They are the ideal mid-morning snack or breakfast on the go. And the best part, they are tweakable with your favorite fruits and superfoods.

Ingredients
For the mango puree
- 2 cups mango chunked
- 1 banana chunked
- 1 tablespoon chia seeds
- 1-2 tablespoons unsweetened almond milk
For the oat mix
- 1 banana
- 1/2 cup rolled oats (certified GF if needed)
- 1/2 cup unsweetened almond milk
- 2 tablespoons chia seeds
- 1/2 teaspoon ground cinnamon or to taste
Instructions
- Add all mango puree ingredients to a blender. Mix until smooth, creamy texture. Set aside. Combine all oats ingredients, except banana, in a bowl and give it a good stir to combine. Then mash banana into the mixture.
- Layer 2 mason jars (or other jars or small bowls) with half of the mango puree, pour oat mixture on top and layer with remaining mango puree.
Notes
- Optional possible toppings: chopped almonds, goji berries, mulberries, coconut flakes, or extra cubed mango pieces.
- Store in the fridge for up to 3 days. If you don't feel like making breakfast for the coming days. Double recipe and add different toppings every day.
