Fruity Citrus Avocado Walnut Salad

Easy and quick, jam-packed with lots of healthy nutrients. The grapefruit is a perfect counter for the butteryness of the avocado.

Ingredients

For the dressing

  • 2 tablespoons extra-virgin olive oil
  • 1/2-1 tablespoon apple cider vinegar
  • 1/2 tablespoon raw sugar or honey/maple syrup
  • black pepper to taste
  • sea salt to taste

For the salad

  • 1/2 avocado sliced or cubed
  • 2 cups salad greens of your choice torn
  • 1/2 orange sectioned
  • 1/2 grapefruit sectioned
  • 1/2 pear sliced
  • 1/2 cup green grapes (preferably seedless) halved
  • 2 tablespoons walnuts chopped

Instructions

  • Combine the oil, vinegar, sugar, and salt to make the dressing.
  • Add all salad ingredients to a large mixing bowl. Toss to combine.
  • Pour over the dressing and mix gently.

Notes

  • Use leftover fruits to make a delicious green smoothie for breakfast/snack.
  • Take along tip: store greens on top and dressing in a separate container.
