Chicken Caprese Pasta
Caprese Chicken Pasta is fast and easy to prepare. Made with simple ingredients everybody can find and afford. A perfect weeknight dinner that quickly comes together, tastes wonderful reheated for lunch the next day and is healthy enough to feed your family on a regular basis.

Ingredients
- 2-2.5 cups whole wheat fusili (or gluten-free alternative)
- 9 oz skinless boneless chicken breast chopped into bite-size pieces
- 3/4 cup onion chopped
- 2 clove garlic minced
- 1.5 cup cherry tomato halved
- 2 cup spinach packed
- 2 tbsps balsamic vinegar
- sea salt to taste
- black pepper to taste
- 1/2 cup fresh basil leaves chopped
- 2 oz mozzarella cheese cut into small cubes
Instructions
- Cook pasta in lightly salted water according to the instructions on the package. When ready drain but keep a little of the cooking water.
- Heat cooking oil over high heat and cook chicken pieces until golden. Transfer to a bowl or plate.
- In the same pan, saute onion over medium heat. Stir regularly. After 2-3 minutes, add garlic and cook for 2-3 min more.
- Add cherry tomatoes. Cook for 5-8 minutes or until softened.
- Add balsamic vinegar and cook for 1 minute more.
- Combine cooked/drained pasta, tomatoes, spinach, salt, and pepper.
- Cook on medium heat until spinach is wilted. If too dry add a little of the pasta cooking water.
- When ready stir in mozzarella and basil.
- Serve.
