Baby Bok Choy And Papaya Salad

Ingredients
For the dressing
- 1/2 lime juiced
- 2 tsps Dijon mustard
- 1 tsp maple syrup/honey
- 2-3 tbsp extra-virgin olive oil
- sea salt to taste
- black pepper to taste
For the salad
- 1-1.5 cup papaya julienned, green or unripe if possible, or mango works too
- 1 cup red cabbage chopped
- 2 cups baby bok choy chopped
- 1/2 cup cucumber chopped
- 1 cup tomato chopped
- 1/2 cup onion chopped
- 1/4 cup spring onion
- 2 Thai chili pepper or jalapeno chopped and seeds removed if you like it less spicy (optional)
- 1/3 cup fresh parsley or cilantro, basil works too
Instructions
For the dressing
- Add all ingredients to a small bowl. Whisk until well combined.
For the salad
- Wash and chop all ingredients.
- Toss them together in a large bowl and add dressing just before serving.
Notes
If making the day before, store dressing in a separate container and add just before serving.
