Avocado Tuna Sandwich

Ingredients
For the dressing
- 1/2 avocado mashed
- 2 tablespoons fresh parsley chopped
- 1 tablespoon fresh chives chopped
- 1 teaspoon dried tarragon (or fresh if you have)
- 1/2 teaspoon lemon zest
- 1/4 lemon juice only (lime works too)
- 0.5-1 teaspoon Dijon mustard
- black pepper to taste
For the tuna salad
- 1 can solid white tuna packed in water drained and flaked
- 4 slices bread of your choice (GF if needed)
- 1/4 cup tomato sliced
- 1/2 cup iceberg lettuce shredded
- 2 slices cheddar cheese (optional)
Instructions
- Whisk together the mashed avocado, parsley, chives, tarragon, lemon zest, lemon juice, mustard and pepper until well combined.
- Gently stir in the flaked tuna.
- Toast the bread slices.
- Spread the tuna mixture evenly over 2 bread slices. Top with tomatoes, lettuce, cheese (if using) and the remaining bread slices.
