Avocado Tuna Sandwich

Ingredients

For the dressing

  • 1/2 avocado mashed
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1 teaspoon dried tarragon (or fresh if you have)
  • 1/2 teaspoon lemon zest
  • 1/4 lemon juice only (lime works too)
  • 0.5-1 teaspoon Dijon mustard
  • black pepper to taste

For the tuna salad

  • 1 can solid white tuna packed in water drained and flaked
  • 4 slices bread of your choice (GF if needed)
  • 1/4 cup tomato sliced
  • 1/2 cup iceberg lettuce shredded
  • 2 slices cheddar cheese (optional)

Instructions

  • Whisk together the mashed avocado, parsley, chives, tarragon, lemon zest, lemon juice, mustard and pepper until well combined.
  • Gently stir in the flaked tuna.
  • Toast the bread slices.
  • Spread the tuna mixture evenly over 2 bread slices. Top with tomatoes, lettuce, cheese (if using) and the remaining bread slices.
