Avocado Tuna Sandwich

For the dressing
- 1/2 avocado mashed
- 2 tablespoons fresh parsley chopped
- 1 tablespoon fresh chives chopped
- 1 teaspoon dried tarragon (or fresh if you have)
- 1/2 teaspoon lemon zest
- 1/4 lemon juice only (lime works too)
- 0.5-1 teaspoon Dijon mustard
- black pepper to taste
For the tuna salad
- 1 can solid white tuna packed in water drained and flaked
- 4 slices bread of your choice (GF if needed)
- 1/4 cup tomato sliced
- 1/2 cup iceberg lettuce shredded
- 2 slices cheddar cheese (optional)
Whisk together the mashed avocado, parsley, chives, tarragon, lemon zest, lemon juice, mustard and pepper until well combined.
Gently stir in the flaked tuna.
Toast the bread slices.
Spread the tuna mixture evenly over 2 bread slices. Top with tomatoes, lettuce, cheese (if using) and the remaining bread slices.
