Banana Chocolate Quinoa Breakfast Bowl
Though I love my green smoothies for breakfast. Sometimes you need a little bit more and this Banana Chocolate Quinoa Breakfast Bowl is just perfect for these tougher days. Delicious warm or cold. Up to you!

Ingredients
For the quinoa bowl
- 1/2 cup uncooked quinoa rinsed
- 1 cup unsweetened almond milk divided
- 1/2 cup water
- sea salt
- 1/2 banana mashed
- 2 teaspoons maple syrup/honey
- 2 teaspoons cacao powder
- 1/2 teaspoon vanilla extract
Toppings
- 1-1.5 oz vegan dark chocolate chopped/grated
- 1/2 banana
Instructions
- Bring quinoa, almond milk, water, and a dash salt to a boil in a small pot.
- Reduce heat to a simmer and cook, stirring occasionally, until all liquid has been absorbed, about 10 minutes.
- Remove quinoa from stove and transfer to a bowl.
- Mix in mashed banana, honey, cocoa powder, and vanilla. Stir until evenly combined.
- Garnish with banana slices and chopped chocolate. Add more almond milk if the porridge is to dry for you.
Notes
- Can be made the day before. Enjoy cold or slightly warm again before serving.
