Though I love my green smoothies for breakfast. Sometimes you need a little bit more and this Banana Chocolate Quinoa Breakfast Bowl is just perfect for these tougher days. Delicious warm or cold. Up to you!

Ingredients

For the quinoa bowl

  • 1/2 cup uncooked quinoa rinsed
  • 1 cup unsweetened almond milk divided
  • 1/2 cup water
  • sea salt
  • 1/2 banana mashed
  • 2 teaspoons maple syrup/honey
  • 2 teaspoons cacao powder
  • 1/2 teaspoon vanilla extract

Toppings

  • 1-1.5 oz vegan dark chocolate chopped/grated
  • 1/2 banana

Instructions

  • Bring quinoa, almond milk, water, and a dash salt to a boil in a small pot.
  • Reduce heat to a simmer and cook, stirring occasionally, until all liquid has been absorbed, about 10 minutes.
  • Remove quinoa from stove and transfer to a bowl.
  • Mix in mashed banana, honey, cocoa powder, and vanilla. Stir until evenly combined.
  • Garnish with banana slices and chopped chocolate. Add more almond milk if the porridge is to dry for you.

Notes

  • Can be made the day before. Enjoy cold or slightly warm again before serving.
