Though I love my green smoothies for breakfast. Sometimes you need a little bit more and this Banana Chocolate Quinoa Breakfast Bowl is just perfect for these tougher days. Delicious warm or cold. Up to you!

For the quinoa bowl
- 1/2 cup uncooked quinoa rinsed
- 1 cup unsweetened almond milk divided
- 1/2 cup water
- sea salt
- 1/2 banana mashed
- 2 teaspoons maple syrup/honey
- 2 teaspoons cacao powder
- 1/2 teaspoon vanilla extract
Toppings
- 1-1.5 oz vegan dark chocolate chopped/grated
- 1/2 banana
Bring quinoa, almond milk, water, and a dash salt to a boil in a small pot.
Reduce heat to a simmer and cook, stirring occasionally, until all liquid has been absorbed, about 10 minutes.
Remove quinoa from stove and transfer to a bowl.
Mix in mashed banana, honey, cocoa powder, and vanilla. Stir until evenly combined.
Garnish with banana slices and chopped chocolate. Add more almond milk if the porridge is to dry for you.
