Homemade Pizza with Bell pepper and Broccolini

Ingredients

For the sauce

  • 3 cups tomato chopped
  • 1/2 onion chopped
  • 2-3 clove garlic minced
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • black pepper to taste
  • sea salt to taste

For the pizza

  • 1 pizza dough for 2 small pizzas (or 1 big to share) scroll down to notes if making your own
  • 1 cup grated mozzarella cheese
  • 2 cups broccolini (or broccoli) stems and leaves removed, finely chopped
  • 1 cup bell pepper (capsicum, any color) chopped

Instructions

  • If making dough, do this first as it needs about 1 hour to rise.

For the sauce

  • Heat a skillet over medium heat. Cook onions for 2-3 minutes. Add garlic and cook 1 minute more. .Add tomatoes and balsamic vinegar. Season with oregano, salt, and pepper to taste. Cook until sauce-like consistency. This will take about 10 minutes. Allow to cool slightly.

For the pizza

  • Preheat oven to 400°F or 200°C.
  • Roll out the dough, top with sauce, cheese, and toppings.
  • Cook in the oven for about 20-25 minutes or until crisp.
