It’s been a while since we’ve talked about chia seeds. And these tiny powerhouses are definitely the most precious seeds in our kitchen. Not to mention, they are packed with healthy omega-3s, antioxidants, calcium, and fiber.

In fact, I add them by the spoon to my morning smoothies, sprinkle them on my lunch salads, make raw chia seed jams or puddings and even use them as an egg replacement.

Here Are 5  Creative Ways To Eat Chia Seeds

 

1.    Raspberry- Coconut Popsicles

Ingredientss

  • 3 tablespoons chia seeds
  • 12 ounce organic or homemade coconut milk (click here for the recipe)
  • ¾ cup raspberries
  • 1 tablespoon coconut or raw sugar (optional)

How To…

  • Combine the chia seeds and coconut milk in a mason jar and shake well.
  • Further, add coconut sugar and raspberries and stir well. (Also, if you are not a chunky person blend raspberries first.)
  • Then, let the chia pudding set for 2 hours and pour into popsicle molds.
  • Before having it, freeze it overnight.

 

2.    Chia Seed Chocolate Mousse With Fresh Berries

Ingredients

  • ¼ cup chia seeds
  • 12 ounce organic or homemade coconut milk (click here for the recipe)
  • ¼ cup maple syrup
  • ½ cup raw cacao powder
  • Cherries or any other topping of your choice (In particular, it works well with other berries, mango, coconut flakes or pistachios.)

How To…

  • Blend all ingredients except the cherries.
  • Then, let sit for 10 minutes to allow the chia seeds to swell and form a gel-like substance.
  • Once it has a tapioca-like consistency, puree until smooth and pour into serving cups.
  • Further,  let set in the fridge for 2 to 4 hours.
  • Consequently, top with fresh berries of your choice.

 

3.    Raw Cherry Chia Seed Bars

Ingredients

How To…

  • First, combine all ingredients in a food processor. Then, process until a paste is formed, which will take about 2 minutes.
  • Next, add the mixture to a baking tray and place in the fridge for about 2 hours.
  • Ultimately, slice them into bars.

 

4.    Homemade Granola Bars

Ingredients

  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • 2 tablespoons chia seeds
  • ½ cup shredded coconut
  • 2 tablespoons coconut oil
  • 2 tablespoon maple syrup
  • Pinch of salt
  • ½ cup chopped dried apricots or any other dried fruit of your choice.

How To…

  • Preheat oven to 300F (150C)
  • Pulse the pumpkin seeds, sunflower seeds, and chia seeds until they have a chunky texture.
  • Add remaining ingredients and pulse for another 20 seconds.
  • Spread mixture out on a baking tray.
  • Bake for 20 minutes, stirring halfway through to avoid burning.
  • Allow the granola to cool and stir in the chopped apricots.
  • Store in an airtight container.

 

5.    Spicy Avocado Toast With Chia Seeds

Ingredients

  • Gluten-free toasted bread
  • Avocado, sliced
  • Chia seeds
  • Lemon zest (for organic lemon)
  • Chili flakes
  • Sea salt
  • Lettuce, cherry tomatoes, and cucumber for serving.

How To…

  • Top a toast with avocado slices, sprinkle with chia seeds, lemon zest, chili flakes, and salt to taste.
  • Serve with lettuce, tomatoes, and cucumber.
