Pineapple Turmeric Anti-Inflammatory Smoothie Recipe

 

Ingredients (serves 2)

  • 2-3 cups fresh diced pineapple
  • 1 lemon, peeled
  • ½ avocado
  • 2 cups kale or spinach
  • 1 tsp turmeric powder or 1 tablespoon freshly grated (about a 1-inch piece)
  • ½ to 1-inch fresh grated ginger root (optional)
  • 2 cups unsweetened coconut water (or green tea or matcha tea works too)
  • A dash of black pepper (it sounds weird but necessary to help with the absorption of curcumin in turmeric)
  • 1 tablespoon coconut oil

How to…

Blend kale and coconut water until smooth, add remaining ingredients and blend again. Add more coconut water if the smoothie is too thick for you.
