Smashed Avocado on Toast
Though the feta cheese adds some more flavor, smashed avocado on toast is also delicious without the cheese to keep it vegan. Up to you 😉

Ingredients
- 2-4 slices bread of your choice (GF if needed) I used rye
- 1 avocado mashed
- 1/4 cup red onion chopped
- 1/2 lime juice only
- 2 tsps fresh mint chopped
- 1/3 cup feta cheese (optional) or goat cheese
- extra-virgin olive oil
- 1/2 tsp paprika powder
- sea salt to taste
- black pepper to taste
Instructions
- Optional: toast the bread.
- While it’s in the toaster, halve, pit and peel the avocado. Scoop out the flesh with a spoon and pop it in a bowl.
- Mash the avocado with a fork and mix in the lime juice and mint. Crumble the cheese and fold it into the avocado mixture, leaving some bits chunky.
- Spread the avocado mixture onto your toast and top with salt, pepper,paprika powder, and a drizzle of olive oil.
Notes
