Smashed Avocado on Toast
Though the feta cheese adds some more flavor, smashed avocado on toast is also delicious without the cheese to keep it vegan. Up to you ;)

- 2-4 slices bread of your choice (GF if needed) I used rye
- 1 avocado mashed
- 1/4 cup red onion chopped
- 1/2 lime juice only
- 2 tsps fresh mint chopped
- 1/3 cup feta cheese (optional) or goat cheese
- extra-virgin olive oil
- 1/2 tsp paprika powder
- sea salt to taste
- black pepper to taste
Optional: toast the bread.
While it’s in the toaster, halve, pit and peel the avocado. Scoop out the flesh with a spoon and pop it in a bowl.
Mash the avocado with a fork and mix in the lime juice and mint. Crumble the cheese and fold it into the avocado mixture, leaving some bits chunky.
Spread the avocado mixture onto your toast and top with salt, pepper,paprika powder, and a drizzle of olive oil.
