Simple Green Salad with Egg
It doesn't always have to be complicated to be delicious. This Simple Green Salad with Egg delivers both on flavor and health benefits. A win-win!

Ingredients
For the dressing
- 1 tbsp maple syrup/honey
- 1/4 lime/lemon juice only (use less if using lemon)
- 1/2 tsp soy sauce/Tamari or tamari
- 1 tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- 1 teaspoon apple cider vinegar
- black pepper to taste
- sea salt to taste
For the salad
- 2 cups salad greens of your choice
- 1/2 cup carrot julienned
- 1/4 cup spring onion chopped
- 1/3 cup red onion chopped
- 1 cup tomato chopped
- 2 egg hard-boiled
- 2 tbsps pumpkin seeds raw or roasted (pepitas)
Instructions
- Add eggs to boiling water and cook for 8 to 10 minutes. Cool under running water.
- Meanwhile: add all dressing ingredients to a small bowl and whisk until combined.
- Add all salad ingredients to a bowl and toss to combine.
- Add egg and drizzle with dressing.
Notes
- If making the salad the day before, store greens on top and keep dressing in a separate container to avoid a soggy mess.
- Add roasted garlic, seeds, nuts, raisin, or goji berries (we used roasted garlic)
- Tamari and soy sauce share a similar color and flavor and are both a byproduct of fermented soybeans. The only difference, Tamari is made without wheat and doesn’t contain any gluten.
