Potato Cabbage Salad with Mustard Dressing
Traditional potato salad is kicked up a notch with the addition of crunchy cabbage, spring onions, and a tangy mustard dressing. Perfect lunch salad to take to work.

Ingredients
For the dressing
- 1 tbsp apple cider vinegar
- 1 tsp mustard
- 1 tsp maple syrup/honey
- 1 tbsp extra-virgin olive oil
For the salad
- 1/4 cup spring onion (scallion) chopped
- 1.5 cup red cabbage chopped
- 1.5 cup green cabbage
- 2 cups potato cooked wedges
- 1 cup salad greens of your choice we used iceberg lettuce
Instructions
- Cook potatoes in lightly salted water until fork tender. Drain and allow to cool.
- Combine all dressing ingredients in a small bowl. Whisk well to combine and set aside.
- In a large bowl, combine all salad ingredients. Toss to combine. Divide and drizzle with mustard dressing to taste.
Notes
Take-along tip: Make sure potatoes are completely cooled before making the salad. Store salad greens on top and keep dressing in a separate container.
