Pineapple Mojito Green Smoothie

A mojito in the morning. Oh yes, you can. This healthy version of a mojito is just yum in the morning or why not add a little rum and serve to your guests as a lovely and healthy cocktail. Not in the morning of course 😉

Ingredients

  • 2 cups kale
  • 2 cups unsweetened coconut water
  • 3 cups pineapple
  • 1/4 cup fresh mint leaves or more to taste
  • 1 lime/lemon peeled and seed removed (use less if using lemon)
  • 1 tbsp chia seeds (optional) (topping)
  • 2 tbsps dried goji berries (optional) (topping)

Instructions

  • Blend kale and coconut water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick for you, add more liquid base. If you have a high-speed blender you can throw in everything at once.
  • Optional: Top with chia seeds, goji berries, flax seed, hemp hearts, etc., if you like.

Notes

  • Use one or more frozen fruits to chill the smoothie. Or use ice instead.
