Mango Coconut Chicken Burger
Though I do not eat meat any longer, this was always a family favorite. It's a great recipe for BBQ or grilling parties!

Ingredients
- 12 ounce skinless boneless chicken breast minced
- 1/2 cup bell pepper (capsicum, any color) chopped
- 1/4 cup spring onion chopped
- 1 jalapeno optional
- 1 cup mango
- 3 tablespoons unsweetened desiccated coconut
- 1/2 cup fresh parsley
- 1 egg
- 1 cup tomato sliced
- 2 cups salad greens of your choice (iceberg, arugula, romaine, etc)
- 4 burger buns or bread rolls of your liking (GF if needed)
- sea salt to taste
- black pepper to taste
Instructions
- Chop the red bell pepper, green onions, and mango into cubes. Mince the jalapeno and chop the parsley.
- Ground the chicken breast using a food processor.
- Mix the ground chicken with the red pepper, green onion, jalapeno, mango, coconut, parsley, and egg in a large bowl. Season with salt and pepper. Make 4 (or 2 big) burger patties.
- Grill/cook the burgers in a grilling/frying pan.
- Serve on toasted bun with tomato slices and lettuce.
- Or serve with green salad on the side.
Notes
- Also very yummy with oven-roasted (sweet) potato chips instead of burger buns.
- To make it even better, also add a few slices cucumber and/or make a yogurt-based herb or avocado dressing for extra flavor.
- Delicious on the BBQ, too!
