Chop the red bell pepper, green onions, and mango into cubes. Mince the jalapeno and chop the parsley.
Ground the chicken breast using a food processor.
Mix the ground chicken with the red pepper, green onion, jalapeno, mango, coconut, parsley, and egg in a large bowl. Season with salt and pepper. Make 4 (or 2 big) burger patties.
Grill/cook the burgers in a grilling/frying pan.
Serve on toasted bun with tomato slices and lettuce.
Or serve with green salad on the side.
