Mackerel Parmesan Salad with Honey Lime Dressing
Just as salmon, mackerel is said to help with cardiovascular disease, prostate cancer, age-related vision loss, and dementia thanks to its richness in omega-3 fatty acids - a type of fat that is good for your health. Next to being an excellent source of omega-3, mackerel is also a good source of vitamin D, protein, some B vitamins, and selenium.

Ingredients
For the dressing
- 1 lime/lemon juice only (use less when using lemon)
- 1 teaspoon honey
- 1/2 teaspoon soy sauce/Tamari
- black pepper to taste
For the salad
- 1 cup carrot julienned
- 1 cup tomato chopped
- 1 cup cucumber cubed
- 1/3 cup red onion chopped
- 1/3 cup spring onion chopped
- 2 cups salad greens of your choice shredded
- 1 small can (4 oz) mackerel in water crumbled
- 1/3 cup grated Parmesan cheese
Instructions
- Whisk together all dressing ingredients.
- Add all salad ingredients to a large salad bowl, except parmesan. Toss to combine. Drizzle with dressing and top with grated parmesan.
Notes
- Optional: add nuts or seeds if you like.
- Tamari and soy sauce share a similar color and flavor. They are both a byproduct of fermented soybeans. The only difference, Tamari is made without wheat and doesn’t contain any gluten.
