Lettuce Wraps with Kidney Beans
If you are on a mission to reduce bread and carbs or just need something a little lighter and brighter, fresh lettuce wraps are a delicious no-bread sandwich option.

Ingredients
For the salad
- 3/4 cup cooked kidney beans rinsed and drained
- 1 cup red cabbage chopped
- 1/4 cup spring onion chopped
- 1 cup spinach chopped
- 1 cup tomato diced
- 1/2 cup cucumber diced
- 4 big leaves iceberg lettuce (to make lettuce wraps) or romaine lettuce works too
For the avocado dressing
- 1/2 avocado
- 1 clove garlic
- 1/2 lime/lemon juice only (use less if using lemon)
- sea salt to taste
- black pepper to taste
Instructions
- Combine all dressing ingredients in a small blender or food processor. Process until smooth. Add a little water if needed.
- Combine all veggies, toss to combine.
- Top big iceberg lettuce leaf (use the outer leaves for this) with veggies and dressing.
- Wrap it up. Add toothpick if needed or wrap in plastic or tin foil to take along.
