Lettuce Wraps with Kidney Beans

Ingredients

For the salad

  • 3/4 cup cooked kidney beans rinsed and drained
  • 1 cup red cabbage chopped
  • 1/4 cup spring onion chopped
  • 1 cup spinach chopped
  • 1 cup tomato diced
  • 1/2 cup cucumber diced
  • 4 big leaves iceberg lettuce (to make lettuce wraps) or romaine lettuce works too

For the avocado dressing

  • 1/2 avocado
  • 1 clove garlic
  • 1/2 lime/lemon juice only (use less if using lemon)
  • sea salt to taste
  • black pepper to taste

Instructions

  • Combine all dressing ingredients in a small blender or food processor. Process until smooth. Add a little water if needed.
  • Combine all veggies, toss to combine.
  • Top big iceberg lettuce leaf (use the outer leaves for this) with veggies and dressing.
  • Wrap it up. Add toothpick if needed or wrap in plastic or tin foil to take along.
