Lettuce Wraps with Kidney Beans
If you are on a mission to reduce bread and carbs or just need something a little lighter and brighter, fresh lettuce wraps are a delicious no-bread sandwich option.

For the salad
- 3/4 cup cooked kidney beans rinsed and drained
- 1 cup red cabbage chopped
- 1/4 cup spring onion chopped
- 1 cup spinach chopped
- 1 cup tomato diced
- 1/2 cup cucumber diced
- 4 big leaves iceberg lettuce (to make lettuce wraps) or romaine lettuce works too
For the avocado dressing
- 1/2 avocado
- 1 clove garlic
- 1/2 lime/lemon juice only (use less if using lemon)
- sea salt to taste
- black pepper to taste
Combine all dressing ingredients in a small blender or food processor. Process until smooth. Add a little water if needed.
Combine all veggies, toss to combine.
Top big iceberg lettuce leaf (use the outer leaves for this) with veggies and dressing.
Wrap it up. Add toothpick if needed or wrap in plastic or tin foil to take along.
