Halloumi Salad with Balsamic Mustard Dressing

Ingredients

For the salad

  • 1.5 cup tomato chopped
  • 3 cups salad greens of your choice
  • 1/3 cup spring onion (scallion) chopped
  • 4 oz halloumi cheese cut into thin slices
  • 1/2 cup cucumber diced

For the dressing

  • 1 tsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp balsamic vinegar
  • 2 tbsps extra-virgin olive oil
  • sea salt to taste
  • black pepper to taste

Instructions

  • In a skillet, heat cooking oil over medium heat. Cook slices in one single layer on both sides until nicely browned and crisp. This will take about 3-5 minutes each side. Allow to cool slightly and chop into smaller pieces.
  • Meanwhile, combine all dressing ingredients in a small bowl. Whisk well until combined. Set aside.
  • Combine all salad ingredients, Top with halloumi and drizzle with mustard dressing.
