Halloumi Salad with Balsamic Mustard Dressing
You'll forget the chicken Ceasar salads when you try this grilled halloumi salad. Never heard of halloumi before? It is one of the only cheeses you can actually bake to a crispy & warm perfection. Lots of healthy fats and proteins.

Ingredients
For the salad
- 1.5 cup tomato chopped
- 3 cups salad greens of your choice
- 1/3 cup spring onion (scallion) chopped
- 4 oz halloumi cheese cut into thin slices
- 1/2 cup cucumber diced
For the dressing
- 1 tsp honey
- 1 tbsp Dijon mustard
- 1 tbsp balsamic vinegar
- 2 tbsps extra-virgin olive oil
- sea salt to taste
- black pepper to taste
Instructions
- In a skillet, heat cooking oil over medium heat. Cook slices in one single layer on both sides until nicely browned and crisp. This will take about 3-5 minutes each side. Allow to cool slightly and chop into smaller pieces.
- Meanwhile, combine all dressing ingredients in a small bowl. Whisk well until combined. Set aside.
- Combine all salad ingredients, Top with halloumi and drizzle with mustard dressing.
Notes
Take-along tip: keep dressing in a separate container and store salad greens and halloumiĀ on top.
