However, as you’ve seen on this blog, you don’t need to starve yourself or stick to an unappetizing diet to be healthy and/or get to your target weight.

What is Coconut Kefir?
You may be more familiar with kefir as a fermented milk-based concoction from Eastern Europe. On its own, coconut milk has a lot going for it. It’s one of the most nutritious foods on the planet. For a start, it’s packed with nutrients and minerals needed by the body to stay healthy, hydrated and cleansed. Coconut milk loses none of its virtue when it’s fermented to become coconut kefir. In fact, you could say that its benefits multiply exponentially.

Great Things from Fermented Foods
During the fermentation process, kefir grains (that are actually little lumps of healthy microbes) are added to coconut milk. These break down the sugars in the liquid into the acids responsible for the drink’s distinctive sour taste.
Two coconut kefir benefits stem directly from this. Firstly, you end up consuming much less unnecessary sugar. Secondly, much like yogurt, this kefir is loaded with probiotics, good bacteria that will aid your digestion while preventing harmful microbes from taking up residence in your body.

DIY Coconut Kefir
Ingredients
- 2-3 tablespoons of kefir grains
- 3 cups of coconut milk (or two cans of organic coconut milk)
FYI: dehydrated milk kefir grains are reactivated with cow’s milk. If you want to keep things 100% vegan, use about 1/4 cup finished water kefir to start the culture.
Instructions
- If using kefir grains for the first time: most commercially available kefir milk grains will come in a dried version and will need reactivation. Carefully read the instructions on the package first, before using them to make coconut kefir.
- Place the milk kefir grains and the coconut milk in a big, clean mason jar (or divide over 2 smaller ones). The jars should be half filled with the coconut milk.
- Cover lightly (I use cheesecloth and rubber band but a coffee filter would work too) and leave at room temperature for at least 12 hours.
- After 12 hours, start tasting the kefir until it reaches the desired level of fermentation. Make sure to use a clean spoon every time you taste to avoid contaminations. Note, the time it takes will depend on the climate you live. We live in tropical climate and culturing goes much faster here, so make sure to keep an eye on it and do a regular taste test until you find it best. This will range in between 12-24 hours.
- When ready, strain out the milk kefir grains and add them to a new batch of coconut milk to repeat the process or store in a cup of milk in the fridge to stop the process, but keep them alive. However, when storing them in the fridge it may take a few batches to get them going again.
- Store the fermented coconut milk kefir in the refrigerator until you drink it.
FYI: while milk kefir grains can be used for coconut milk instead of cow’s milk, it may take a few batches to make them adjust to the coconut milk. So no panic if the first batches don’t come out with the desired consistency or taste.
