Blueberry Chia Seed Pudding Granola Parfait

Ingredients

  • 1 cup plain unsweetened (coconut) yogurt
  • 1/2 cup unsweetened almond milk
  • 2 tbsps maple syrup/honey
  • 2-3 tbsps chia seeds
  • 1 cup granola homemade or store-bought
  • 1 cup blueberries

Instructions

  • In a bowl, whisk together yogurt, milk, and maple syrup or honey. Stir in chia seeds.
  • Layer half of the granola in a bowl or small mason jar. Add chia seed mixture, layer with remaining granola and top with blueberries.
  • Cover jars and chill until ready to serve (the chia seeds need at least 1 hour to turn the liquids into pudding).
  • Add other toppings such as goji berries, raw cacao nibs or hemp hearts if you like.
