Blueberry Chia Seed Pudding Granola Parfait

Ingredients
- 1 cup plain unsweetened (coconut) yogurt
- 1/2 cup unsweetened almond milk
- 2 tbsps maple syrup/honey
- 2-3 tbsps chia seeds
- 1 cup granola homemade or store-bought
- 1 cup blueberries
Instructions
- In a bowl, whisk together yogurt, milk, and maple syrup or honey. Stir in chia seeds.
- Layer half of the granola in a bowl or small mason jar. Add chia seed mixture, layer with remaining granola and top with blueberries.
- Cover jars and chill until ready to serve (the chia seeds need at least 1 hour to turn the liquids into pudding).
- Add other toppings such as goji berries, raw cacao nibs or hemp hearts if you like.
