Blueberry Chia Seed Pudding Granola Parfait

- 1 cup plain unsweetened (coconut) yogurt
- 1/2 cup unsweetened almond milk
- 2 tbsps maple syrup/honey
- 2-3 tbsps chia seeds
- 1 cup granola homemade or store-bought
- 1 cup blueberries
In a bowl, whisk together yogurt, milk, and maple syrup or honey. Stir in chia seeds.
Layer half of the granola in a bowl or small mason jar. Add chia seed mixture, layer with remaining granola and top with blueberries.
Cover jars and chill until ready to serve (the chia seeds need at least 1 hour to turn the liquids into pudding).
Add other toppings such as goji berries, raw cacao nibs or hemp hearts if you like.
