Blueberry Chia Overnight Oats

Blueberry Chia Overnight Oats are a delicious and highly nutritious breakfast made even better with the added chia seeds!

Ingredients

  • 3/4 cup granola (certified GF if needed) (or use old fashioned oats instead)
  • 3/4 cup plain unsweetened (coconut) yogurt
  • 1/2 cup unsweetened almond milk
  • 1-2 tbsp chia seeds
  • 1 tsp maple syrup/honey
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1.5 cup blueberries or any other fruit of your choice

Instructions

  • In a jar or bowl, combine yogurt, almond milk, chia seeds, maple syrup/honey, vanilla and cinnamon. Mix well. If using rolled oats, add to the mix too.
  • Cover tightly with a lid or plastic wrap and refrigerate overnight.
  • Layer half of the granola (if using), half of the blueberries, and yogurt mixture. Top with remaining granola and bluebrries.

Notes

  • If you forgot to make this the day before, no worries. Tastes great without the overnight fridge step, too. Just leave the chia seeds out or use a little less. They will not have the time to gel-ify and make a pudding-like consistency, add more yogurt instead.
