Blueberry Chia Overnight Oats
Blueberry Chia Overnight Oats are a delicious and highly nutritious breakfast made even better with the added chia seeds!

Ingredients
- 3/4 cup granola (certified GF if needed) (or use old fashioned oats instead)
- 3/4 cup plain unsweetened (coconut) yogurt
- 1/2 cup unsweetened almond milk
- 1-2 tbsp chia seeds
- 1 tsp maple syrup/honey
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1.5 cup blueberries or any other fruit of your choice
Instructions
- In a jar or bowl, combine yogurt, almond milk, chia seeds, maple syrup/honey, vanilla and cinnamon. Mix well. If using rolled oats, add to the mix too.
- Cover tightly with a lid or plastic wrap and refrigerate overnight.
- Layer half of the granola (if using), half of the blueberries, and yogurt mixture. Top with remaining granola and bluebrries.
Notes
- If you forgot to make this the day before, no worries. Tastes great without the overnight fridge step, too. Just leave the chia seeds out or use a little less. They will not have the time to gel-ify and make a pudding-like consistency, add more yogurt instead.
