Ingredients
3/4cupgranola (certified GF if needed)(or use old fashioned oats instead)
3/4cupplain unsweetened (coconut) yogurt
1/2cupunsweetened almond milk
1-2tbspchia seeds
1tspmaple syrup/honey
1tspvanilla extract
1/2tspground cinnamon
1.5cupblueberriesor any other fruit of your choice
Instructions
In a jar or bowl, combine yogurt, almond milk, chia seeds, maple syrup/honey, vanilla and cinnamon. Mix well. If using rolled oats, add to the mix too.
Cover tightly with a lid or plastic wrap and refrigerate overnight.
Layer half of the granola (if using), half of the blueberries, and yogurt mixture. Top with remaining granola and bluebrries.
Notes
If you forgot to make this the day before, no worries. Tastes great without the overnight fridge step, too. Just leave the chia seeds out or use a little less. They will not have the time to gel-ify and make a pudding-like consistency, add more yogurt instead.
