Peach Avocado Green Tea Soft Serve Ice Cream

Ice cream for breakfast? Oh yes you can! Ever since we moved to the tropics I have been a huge fan of green smoothie ice creams. Such a refreshing start of a hot day.

Ingredients

  • 3 peach pit removed, roughly chopped and frozen (optional: save some for topping)
  • 1 avocado roughly chopped and frozen
  • 3/4 cup green tea cooled in the fridge
  • 1-2 tablespoons maple syrup/honey optional
  • 1 cup spinach optional
  • 1/2 tsp vanilla extract

Instructions

  • Freeze spinach, peaches and avocado the day before.
  • Brew green tea and cool down in the fridge. Or use almond milk and matcha green tea powder instead.
  • Use a blender or food processor to blend spinach and tea until well combined. Add all other ingredients, when frozen, and blend until smooth soft serve texture. You may need to move things around in the processor a bit, or use a tamper to push everything down into the blades.
  • Add water/almond mil if needed if needed.

Notes

Optional: top with mint, goji berries or mulberries. Or use extra pieces of fresh fruits or other superfoods such as pistachios, almonds, or raw cacao nibs.
