Green Salad with Pineapple and Orange Dressing

Ingredients

For the salad:

  • 2-3 cups salad greens of your choice
  • 1 cup carrot chopped
  • 1 cup cherry tomato halved
  • 1 cup pineapple chopped

For the dressing:

  • 1 clove garlic minced
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon apple cider vinegar
  • 1/2 orange juice only
  • 1 tablespoon sesame oil
  • sea salt to taste
  • black pepper to taste

Toppings

  • 1-2 tablespoons unsweetened desiccated coconut
  • 1-2 tablespoons dried goji berries (optional)
  • 2 tablespoons pumpkin seeds raw or roasted

Instructions

  • Whisk together all dressing ingredients.
  • Add all salad ingredients to a large salad bowl. Toss to combine.
  • Drizzle with dressing and top with your favorite toppings (seeds, nuts, goji berries, etc), if using.

Notes

  • Take-along tip: store greens on top and add dressing to a separate container.
