Green Salad with Pineapple and Orange Dressing

Ingredients
For the salad:
- 2-3 cups salad greens of your choice
- 1 cup carrot chopped
- 1 cup cherry tomato halved
- 1 cup pineapple chopped
For the dressing:
- 1 clove garlic minced
- 1 teaspoon fresh grated ginger
- 1 tablespoon apple cider vinegar
- 1/2 orange juice only
- 1 tablespoon sesame oil
- sea salt to taste
- black pepper to taste
Toppings
- 1-2 tablespoons unsweetened desiccated coconut
- 1-2 tablespoons dried goji berries (optional)
- 2 tablespoons pumpkin seeds raw or roasted
Instructions
- Whisk together all dressing ingredients.
- Add all salad ingredients to a large salad bowl. Toss to combine.
- Drizzle with dressing and top with your favorite toppings (seeds, nuts, goji berries, etc), if using.
Notes
- Take-along tip: store greens on top and add dressing to a separate container.
