Spicy Beef Tortillas With Oven baked Sweet Potato Fries And Tomato Salsa

Ingredients

For the Tortilla’s

  • 12 oz grassfed organic beef/steak
  • 2 cloves garlic minced
  • 1/2 cup onion finely chopped
  • 1/2 teaspoon paprika powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • sea salt to taste
  • black pepper to taste
  • 4 corn tortillas or use hard shell tacos, if you prefer those

For The Sweet Potato Fries

  • 2 medium sweet potato
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika powder
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon ground cumin
  • 1/4-1/8 teaspoon cayenne pepper
  • sea salt to taste
  • black pepper to taste
  • 2 tablespoons extra-virgin olive oil or melted refined coconut oil

For The Salsa

  • 1.5 cup tomato diced
  • 1/3 cup red onion chopped
  • 1/2 Thai chili pepper or jalapeno minced (seeded if desired)
  • 1/2 cup fresh parsley/cilantro chopped
  • 1 clove garlic minced
  • 1/2 lime/lemon juice only (use less when using lemon)
  • 1 tablespoons extra-virgin olive oil
  • sea salt to taste
  • black pepper to taste

For the topping

  • 1/2 avocado mashed
  • 1/2 lime/lemon juice only (use less if using lemon)
  • sea salt
  • black pepper
  • 1/2 cup (cashew) sour cream (scroll down for dairy-free cashew sour cream recipe)

Instructions

  • Start with the fries, cut the sweet potatoes into ½ inch thick matchsticks. Place them in a large bowl and drizzle with oil, chili powder, oregano, paprika, cayenne, cumin, sea salt and pepper. Toss to coat. Preheat the oven to 425°F and bake the fries on a baking sheet for 15-20 minutes, flip the fries, and bake for another 15-20 minutes.
  • Tomato Salsa: combine all ingredients, season with salt and pepper.
  • Topping: mash the avocado with lemon juice and a pinch of sea salt and pepper. You could add the sour/cashew cream too or serve as a separate topping.
  • The meat: Cut the steak in thin strips. Heat a large skillet over medium-high heat and cook the onion until tender. Add the beef, garlic, paprika, cumin, chili powder, sea salt, and pepper. Cook for a few minutes, make sure the meat is still tender and juicy.
  • Assemble: spread the beef in the middle of a warmed tortilla. Top with the tomato salsa, mashed avocado, cashew/sour cream (optional), and sweet potato fries.
