Pina Colada Overnight Oats

It makes a lovely breakfast or snack on-the-go and can be stored in the fridge up to 3 days. So feel free to double, triple the recipe. It will make your morning so much easier. Can be eaten as a healthy snack too.

Ingredients

For the overnight oats

  • 1 cup rolled oats
  • 1 cup unsweetened almond milk or coconut milk
  • 1 banana mashed
  • 1 cup pineapple crushed
  • 1/4-1/2 tsp vanilla extract
  • 2 tbsp unsweetened desiccated coconut
  • 2 tsp maple syrup/honey optional
  • 2 tsp chia seeds

For the topping

  • 1 banana sliced (or use pineapple cubes instead, or both)
  • 2 tbsp raw cacao nibs/raw chocolate (optional)

Instructions

  • Pour oats, vanilla extract and almond milk into a bowl or jar.
  • Stir in all other overnight oats ingredients. Cover and let sit in the refrigerator till breakfast.
  • In the morning, top with more fresh fruits and desiccated coconut.

Notes

  • Other possible toppings: goji berries, nut butter of your choice, granola, etc.
