Pina Colada Overnight Oats
It makes a lovely breakfast or snack on-the-go and can be stored in the fridge up to 3 days. So feel free to double, triple the recipe. It will make your morning so much easier. Can be eaten as a healthy snack too.

Ingredients
For the overnight oats
- 1 cup rolled oats
- 1 cup unsweetened almond milk or coconut milk
- 1 banana mashed
- 1 cup pineapple crushed
- 1/4-1/2 tsp vanilla extract
- 2 tbsp unsweetened desiccated coconut
- 2 tsp maple syrup/honey optional
- 2 tsp chia seeds
For the topping
- 1 banana sliced (or use pineapple cubes instead, or both)
- 2 tbsp raw cacao nibs/raw chocolate (optional)
Instructions
- Pour oats, vanilla extract and almond milk into a bowl or jar.
- Stir in all other overnight oats ingredients. Cover and let sit in the refrigerator till breakfast.
- In the morning, top with more fresh fruits and desiccated coconut.
Notes
- Other possible toppings: goji berries, nut butter of your choice, granola, etc.
