Pesto Tartlets with Broccolini and Cherry Tomatoes

These pesto tartlets are really tasty and a perfect starter for a dinner party. Or why not serve them with a small green salad to turn them in a delicious, crispy main?

Ingredients

For the pesto

  • 1 cup fresh basil leaves
  • 1-2 clove garlic
  • 1/8 cup grated Parmesan cheese
  • 1/4 cup unsalted almonds
  • 3 tbsp extra-virgin olive oil
  • sea salt to taste

For the tartlets

  • 1 sheet puff pastry
  • 1/3 cup onion sliced
  • 1 cup cherry tomato halved
  • 1 cup broccolini (or broccoli) finely chopped
  • 1 tbsp extra-virgin olive oil
  • sea salt to taste
  • black pepper to taste
  • 1/8 cup grated Parmesan cheese

For the green salad

  • 1 cup salad greens of your choice
  • 1/2 cup cucumber sliced
  • 1/2 cup cherry tomato halved

Instructions

  • Use a sharp kitchen knife to chop off any leaves and any thick stems from the broccolini stalks.
  • Combine onion, cherry tomatoes, broccolini in a big bowl. Drizzle with olive oil and season with salt and pepper.
  • Cut puff pastry in even squares. Divide pesto over the squares, stay about 1 inch from the side.
  • Curl sides up and add a little grated Parmesan on top. Bake until golden. This will take about 15-20 minutes.
  • Combine salad ingredients in a small bowl. Optional: add a little olive oil (or balsamic vinegar), a squeeze of lime or lemon, and black pepper.
  • Serve with veggie tartlets

Notes

  • Save the tougher broccolini stems to add to your soups or morning green smoothies.
