Pesto Tartlets with Broccolini and Cherry Tomatoes
These pesto tartlets are really tasty and a perfect starter for a dinner party. Or why not serve them with a small green salad to turn them in a delicious, crispy main?

For the pesto
- 1 cup fresh basil leaves
- 1-2 clove garlic
- 1/8 cup grated Parmesan cheese
- 1/4 cup unsalted almonds
- 3 tbsp extra-virgin olive oil
- sea salt to taste
For the tartlets
- 1 sheet puff pastry
- 1/3 cup onion sliced
- 1 cup cherry tomato halved
- 1 cup broccolini (or broccoli) finely chopped
- 1 tbsp extra-virgin olive oil
- sea salt to taste
- black pepper to taste
- 1/8 cup grated Parmesan cheese
For the green salad
- 1 cup salad greens of your choice
- 1/2 cup cucumber sliced
- 1/2 cup cherry tomato halved
Use a sharp kitchen knife to chop off any leaves and any thick stems from the broccolini stalks.
Combine onion, cherry tomatoes, broccolini in a big bowl. Drizzle with olive oil and season with salt and pepper.
Cut puff pastry in even squares. Divide pesto over the squares, stay about 1 inch from the side.
Curl sides up and add a little grated Parmesan on top. Bake until golden. This will take about 15-20 minutes.
Combine salad ingredients in a small bowl. Optional: add a little olive oil (or balsamic vinegar), a squeeze of lime or lemon, and black pepper.
Serve with veggie tartlets
