Mozzarella Walnut Pesto Sandwich - an easy, yummy twist on the normal mozzarella pesto sandwich.

Ingredients
For the walnut pesto
- 1-2 cloves garlic
- 1/2 cup fresh parsley
- 1/8 cup grated Parmesan cheese
- 1/8 cup walnuts
- 1/8 cup extra-virgin olive oil
- 1/8 lime/lemon juice only (use less when using lemon)
- sea salt
- black pepper
For the sandwich
- 4 slices bread of your choice (GF if needed)
- 4 ounce mozzarella cheese sliced
- 1/2 cup tomato sliced
- 1/2-1 cup spinach
Instructions
- Blend all pesto ingredients until smooth.
- Top half of the bread slices with the pesto and add mozzarella slices, tomato slices, and spinach. Cover with remaining bread slices.
- Add a little cooking oil on both sides. In a skillet, cook sandwiches on both sides until nicely browned. Use a sandwich toaster or panini press if you have one.
