For the walnut pesto
- 1-2 cloves garlic
- 1/2 cup fresh parsley
- 1/8 cup grated Parmesan cheese
- 1/8 cup walnuts
- 1/8 cup extra-virgin olive oil
- 1/8 lime/lemon juice only (use less when using lemon)
- sea salt
- black pepper
For the sandwich
- 4 slices bread of your choice (GF if needed)
- 4 ounce mozzarella cheese sliced
- 1/2 cup tomato sliced
- 1/2-1 cup spinach
Blend all pesto ingredients until smooth.
Top half of the bread slices with the pesto and add mozzarella slices, tomato slices, and spinach. Cover with remaining bread slices.
Add a little cooking oil on both sides. In a skillet, cook sandwiches on both sides until nicely browned. Use a sandwich toaster or panini press if you have one.
