Ingredients

For the walnut pesto

  • 1-2 cloves garlic
  • 1/2 cup fresh parsley
  • 1/8 cup grated Parmesan cheese
  • 1/8 cup walnuts
  • 1/8 cup extra-virgin olive oil
  • 1/8 lime/lemon juice only (use less when using lemon)
  • sea salt
  • black pepper

For the sandwich

  • 4 slices bread of your choice (GF if needed)
  • 4 ounce mozzarella cheese sliced
  • 1/2 cup tomato sliced
  • 1/2-1 cup spinach

Instructions

  • Blend all pesto ingredients until smooth.
  • Top half of the bread slices with the pesto and add mozzarella slices, tomato slices, and spinach. Cover with remaining bread slices.
  • Add a little cooking oil on both sides. In a skillet, cook sandwiches on both sides until nicely browned. Use a sandwich toaster or panini press if you have one.
