Chicken Avocado Wraps

These Chicken and Avocado Wraps with lettuce, veggies, and avocado make a perfect quick and delicious lunch or dinner.

Ingredients

  • 1/2 cup carrot julienned
  • 2 cups salad greens of your choice shredded
  • 1 avocado cubed
  • 1 cup cucumber cubed
  • 1 cup tomato cubed
  • 1/2 cup red onion chopped
  • 10 ounce skinless boneless chicken breast cut into bite size pieces
  • 4 medium wrap/tortilla (GF If needed)
  • 1/4 cup cashew/sour cream (scroll down for the cashew sour cream recipe)

Instructions

  • Heat coconut oil over medium-high heat and cook the chicken.
  • Meanwhile warm the wraps in a dry frying pan or in the oven.
  • Top tortilla with veggies, avocado, chicken, and cashew cream (or sour cream).
  • Wrap firmly and enjoy.

Notes

  • To add a spicy flavor to your chicken, mix lime juice (or lemon), with chili powder and garlic to coat your chicken pieces before cooking.
  • This recipe makes a great lunch as well when served cool. Wrap in cling film while cooling, unwrap, cut in halves (use a toothpick if needed to keep together), and pack in a lunchbox.
