Chicken Avocado Wraps
These Chicken and Avocado Wraps with lettuce, veggies, and avocado make a perfect quick and delicious lunch or dinner.

Ingredients
- 1/2 cup carrot julienned
- 2 cups salad greens of your choice shredded
- 1 avocado cubed
- 1 cup cucumber cubed
- 1 cup tomato cubed
- 1/2 cup red onion chopped
- 10 ounce skinless boneless chicken breast cut into bite size pieces
- 4 medium wrap/tortilla (GF If needed)
- 1/4 cup cashew/sour cream (scroll down for the cashew sour cream recipe)
Instructions
- Heat coconut oil over medium-high heat and cook the chicken.
- Meanwhile warm the wraps in a dry frying pan or in the oven.
- Top tortilla with veggies, avocado, chicken, and cashew cream (or sour cream).
- Wrap firmly and enjoy.
Notes
- To add a spicy flavor to your chicken, mix lime juice (or lemon), with chili powder and garlic to coat your chicken pieces before cooking.
- This recipe makes a great lunch as well when served cool. Wrap in cling film while cooling, unwrap, cut in halves (use a toothpick if needed to keep together), and pack in a lunchbox.
