Mozzarella Walnut Salad with Balsamic Dressing

Ingredients
For the salad
- 3 cups salad greens of your choice
- 1 cup red cabbage chopped
- 1 cup (Daikon) radish chopped
- 1 cup tomato chopped
- 4 oz mozzarella cheese cubed
- 1/4 cup walnuts chopped
For the dressing
- 1 tbsp balsamic vinegar
- 1 tbsp fresh grated ginger
- 2 tbsp extra-virgin olive oil
- 1 tbsp maple syrup/honey
- 1/2 lime/lemon juice only (use less if using lemon, ½ lime = 1 tbsp juice)
- black pepper to taste
- sea salt to taste
Instructions
- Whisk together all dressing ingredients.
- Add all salad ingredients to a large salad bowl. Toss to combine.
- Drizzle with dressing and top with chopped walnuts.
Notes
Take-along tip: store greens and walnuts on top and add dressing to a separate container.
