Fast Tomato Lasagna with Blue Cheese
While many dishes are considered comfort foods, lasagna is definitely one of them. If you always thought it's too much work, then take a look at this fast tomato lasagna recipe instead of opting for a store-bought version. This one is so much better.

Ingredients
For the lasagna
- 1.5 cup carrot finely chopped
- 2 cups zucchini finely chopped
- 1/2 cup onion finely chopped
- 3 cloves garlic minced
- 3.5 cups tomato chopped
- 3 cups spinach
- 2 oz blue cheese
- 1/4 cup water
- 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1 bay leaf
- sea salt to taste
- black pepper to taste
- 1/2 cup grated cheese
- 6-8 whole wheat lasagna noodles
For the green salad
- 1 cup tomato cubed
- 3 cups salad greens of your choice packed
Instructions
- In a large pot, heat cooking oil over medium heat. Cook onion for 3 minutes, add garlic and cook 2 minutes more.
- Add carrots, and zucchini and cook for 5 minutes. Sir regularly.
- Stir in tomatoes, water, and herbs. Cover and cook until tomatoes fall apart and form a sauce.
- Then add spinach and blue cheese and cook until wilted.
- Preheat oven to 400F or 200C.
- In an oven-safe dish, layer half of the sauce and top with lasagna noodle sheets. repeat layering and finish with grated cheese.
- Cook for 20-30 minutes in the oven, or until noodles are cooked through. Grill cheese layer last few minutes if needed.
- Serve with green salad on the side.
